Digital ink is an easy way to annotate existing resources so you don't have to retype them to fit a particular lesson.
One easy way is to simply write and draw additional information needed. I find this really useful for students with SEN needs or to add a challenge task.
If the resource needs more significant editing, I use the sniping tool (shortcut for Windows: shift + widows + s) to copy and paste parts of the resource into a new document. Then it's easy to add new text by handwriting using digital ink.
