Hi,
So since yesterday I'm a pretty happy user of Intuos Pro S (PTH-451-RUPL - on that note, sidetracking a bit, is that the only Pro model which didn't get the facelift yet in 2018? As I see the M and L have *60 at the end. Any idea which main features of 2018 lineup I'm missing?)

But onto the main point, the whole idea of using a graphics tablet is new to me, and after 24h of playing with it, I think what I would most need is to see the result directly under the stylus, on paper.

However, I'm not a graphics professional, I use the functionality to be able to brainstorm ideas in screensharing, so I need the results of what I draw to be visible live as I draw them, on PC monitor, without the need to hit a button to update the PC (but cannot pay the price of Cintiq just yet).

Would the Intuos Pro M/L Paper fullfill this need? Are the Bamboo line paper tablets suitable as well?

Yes, the Intuos Pro Paper bundle is the most indicated for you.
All you need to do then, is Install the Inkspace App and you will be able to use the feature called "Live Mode": https://www.youtube.com/watch?v=I81M5E4X1Ww

Is there any way using Wacom products to draw on paper and see results live in another app - let's say MS Paint ?

If not, is there any way at all to draw and look at what you draw (be it paper, display), while at the same time showing the result live in any app of choice?

It will only work with Inkspace and live mode, but you can later export the files in any of the most used formats like .png and .svg.
No other apps offer support for the Intous Pro Paper mode.

Last question - would it be possible to use Intuos Pro Paper like a normal Pro, with "paper" stylus, to move/click the mouse cursor on PC screen (in any given app), but at the same time leaving traces on paper, for better accuracy?
